Peanut Oil Salmon

Crispy & delicious! Peanut Oil Salmon is a healthier dinner choice that only takes 15 minutes to cook.

I’m pretty new to the process of cooking fish in unique ways. I absolutely love salmon, cod and shrimp, but I usually boil or bake all of the fish I make. To be honest it’s starting to get a bit boring!

Josh has this awesome method for pan frying fish, and I have never been brave enough to try it. It involves very hot peanut oil and a griddle, so I am a big ol’ scaredy cat. I usually struggle to make bacon without the occasional high-pitched “YIP!!”. Alas, my saving grace is a mesh pan cover! Josh got one a couple of months back and I had almost totally forgotten about it. And to think of all the oil spattering I could have avoided since he bought it!

Equipped with my new favorite kitchen utensil, I finally made the pan fried salmon I’ve been wanting to try. The results were very good, but Josh will always make it better for some reason 🙂

Salmon Ingredients

  • 3 tbsp Peanut oil
  • 2 Salmon filets
  • Seasoning (cracked pepper, salt, lemon & pepper – to taste)

Homestyle Broccoli

  • Steamed broccoli
  • 2 tbsp butter
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs

Preparing the Salmon:

If frozen, thaw salmon. Pat salmon filets dry with a paper towel and set aside.

Add about 3 tbsp of peanut oil to a skillet or grill pan and heat to medium/high for about 3 minutes. Once oil is hot, place salmon into the pan and cover with a mesh pan cover. Cook for about 5 minutes.

Remove mesh cover and check underside of filet to ensure that it is browned enough for flipping. Once the filet has reached the desired amount of browning, turn over and replace the mesh cover. Top this side of the salmon with your seasonings and fry for another 3-5 minutes, or until filet is browned. Remove pan from heat and allow to cool for a minute or two.

Preparing the Broccoli:

I use steam bag broccoli from Sam’s club, which requires simply placing a bag of frozen broccoli in the microwave for 5 minutes. Super easy. If you don’t use these steam bags, prepare your broccoli however you prefer. Once broccoli is cooked, place in a casserole dish and top with 2 tbsp of butter. Mix thoroughly until butter is melted into the broccoli. Add 1/4 cup of breadcrumbs and 1/4 cup of shredded cheese. Place in microwave for 2-3 minutes, or until cheese is melted. Again, super easy!

The Final Product:

The broccoli in it’s cheese goodness! Not too much cheese, though, for you health nuts out there 😉

Take that, boring baked salmon! The peanut flavor on this is amazing, btw! If you love peanut-fried anything, you’ll definitely love this unique flavor on salmon. Sooo good!
