Summer’s a busy time. Admittedly, my blog is getting very little action these days. But you probably already knew that. I am convinced that fall will be a sort of reawakening for my blog. For now though, you can feast your eyes on this easy, and relatively cool BLT sandwich I made a couple weeks ago.
The cast: Bacon, lettuce, tomato, onion, mushrooms & avocado.
Adding lightly cooked mushrooms and onions gives this sandwich a heartier, and more summery-bbq-esque taste.
Pause for a moment, and give some love to bacon.
You can keep your mushrooms and onions grilled, like so, or add a savory touch to them…
I tossed the mushrooms and onions in a mixture of ranch dressing and brown mustard. This is obviously optional, but I think it adds a nice touch.
In other news, here’s some healthy stuff.
I could probably eat this sandwich by itself…
But bacon’s always a nice touch.
