4th of July: Raspberry Watermelon Chiller

Hot summer days deserve delicious grown up summer drinks. Last summer I made a mighty delicious watermelon drink that I was thinking about the other day. I remembered that I even did that fancy thing where you carve out the watermelon and serve the drink right out of the rind. I didn’t go as far to do that sort of thing this time, but I did add some fresh raspberries and even a little wine. It turned out so refreshing and delicious that I pretty much drank it nonstop for a few days.

Ingredients:

  • 4 cups diced seedless watermelon (chilled)
  • 1 cup orange juice (low pulp)
  • 1 cup white wine (I used Chardonnay. I’d recommend Riesling or a sparkling white wine)
  • 1 cup raspberry iced tea
  • 1 cup fresh raspberries (chilled)
  • 4 cups ice

Process:

Step 1: Prepare watermelon by dicing it into small cubes, separating it from its rind and removing any seeds.

Step 2: Add to blender:  half the ice (2 cups), orange juice, half the watermelon (2 cups). Select “chop ice” mode and blend until ice is finely chopped. Add remaining ice, raspberry iced tea and watermelon. Blend for 30 seconds.

Step 3: Pour mixture into a glass and garnish with a few fresh raspberries.

Step 4: Sit back, relax and stay cool 🙂
