Buffalo Chicken Wontons

I think I’m on some kind of a bar food/appetizer kick lately. I bought wonton wrappers a few weeks ago with the intention of making baked crab rangoon (a recipe I’ve made before, originally found on Pinterest). However, it’s kind of impossible to make without imitation crab meat, which I forgot to buy while at the store. So here I am with around 50 wanton wrappers, and very little idea of what to do with them at this point. So alas, this is sort of an off the cuff sort of recipe. I had never made anything like it before, and it just so happened to taste pretty good. Kind of hard to screw something up when cheese, chicken and cream cheese are involved 😉

Ingredients:

  • 12 Wonton wrappers
  • 1/2 brick cream cheese
  • 1/3 cup sour cream
  • 1/3 cup plain yogurt
  • 3 oz Garlic pepper allspice
  • 2 tbsp butter
  • 1/2 cup water
  • 1lb of boneless/skinless chicken breast
  • 5oz Wing Sauce
  • 1 cup of shredded cheese of your choice
  • 1 stick of string cheese
  • 5 whole mushrooms (optional)

Process:

  1. Cook chicken breast, covered, on medium-high heat in butter and water.
  2. While chicken is cooking, Preheat oven to 350 degrees.
  3. Blend mixture of cream cheese, sour cream and plain yogurt. While blending, add Garlic pepper allspice and half of the wing sauce to the mixture. Blend until fully mixed and smooth.
  4. Coat a 12 count muffin tray with vegetable spray, and place wontons in each cup. Make sure the wontons do not fold into themselves.
  5. Once chicken is done cooking, place a dollop of the cream cheese mixture within each cup.
  6. Dice string cheese into 12 equal pieces (about 1/4 inch), and sauté mushrooms until they are brown.
  7. Shred chicken breast into small pieces and coat with remaining wing sauce. Place a tablespoon (ish) of shredded chicken into wontons.
  8. Place a diced piece of string cheese over the chicken in each cup, and layer with shredded cheese and mushroom slices for garnish.
  9. Bake for 10-15 minutes, or until wontons are golden brown and cheese is melted.
  10. Serve with celery sticks and enjoy!

Overall, we were pretty satisfied with how these turned out. We had about 6 of them left after we snacked on some, and Josh even requested to take the rest to work for lunch today. I think he was pretty happy with how much wing sauce I used. It gave them quite a kick. I actually think these would be delicious with a little blue cheese crumbled over the top, especially with the buffalo flavor. The Buffalo Chicken Wontons were a hit, and would make a great little snack for parties.
